Low sugar chia jam

Add it to Greek yoghurt and granola, have it mixed with peanut butter on toast, add it to a bagel, serve it with a cheese board.. the list goes on

Ingredients

  • 2 cups fresh or frozen fruit

  • 2 tablespoons chia seeds

  • 2 teaspoons lemon juice 

  • 1-2 tablespoons maple syrup (if desired)  

Method

  1. Heat fruit in a saucepan over medium-high heat, stirring occasionally, until bubbles appear. Then mash fruit with a fork 

  2. Stir in the chia seeds, lemon juice plus 1-2 tablespoons maple syrup if desired. 

  3. Remove from heat and let cool (it will thicken as it cools). 

Chia jam lasts up to 1 week in the fridge or up to 3 months in the freezer if kept in a sealed container.
