Low sugar chia jam
Ingredients
2 cups fresh or frozen fruit
2 tablespoons chia seeds
2 teaspoons lemon juice
1-2 tablespoons maple syrup (if desired)
Method
Heat fruit in a saucepan over medium-high heat, stirring occasionally, until bubbles appear. Then mash fruit with a fork
Stir in the chia seeds, lemon juice plus 1-2 tablespoons maple syrup if desired.
Remove from heat and let cool (it will thicken as it cools).
Chia jam lasts up to 1 week in the fridge or up to 3 months in the freezer if kept in a sealed container.
